The dark kitchen economics problem
A delivery-only kitchen exists entirely inside aggregator platforms, which means every customer, every review and every repeat order belongs to the platform and costs a commission each time. Margins in this model are thin enough that the commission often is the profit. Running several brands from one kitchen compounds the problem: the operational complexity is yours and the customer relationship is not.
What we build for one
First, a direct ordering channel per brand, with the menu, zones and timing under your control rather than a platform. Second, one order queue behind the brands, since the kitchen is shared and the operations must be. Third, delivery zone and capacity limits enforced at checkout, because over-accepting during a peak destroys the ratings the platforms judge you on. Fourth, customer data and reorder prompts, which is the whole reason to own a channel at all.
